“WINTAH” BROWN BRAISED BONELESS SHORT RIBS WITH CHERRY SAUCE

RECIPE FROM CHEF TOMMASO

(PEPPERCORN’S GRILLE & TAVERN AND WORMTOWN BREWERY)

Prep time: 45 minutes

Cooking time: 3-3 ½ hours

Ingredients

2 ½ to 3 lbs. boneless ribs

4 slices of pancetta (cut in small squares)

Kosher salt

Fresh ground black pepper

2 medium onions (sliced thin)

6 medium red bliss potatoes (cut in 1” pieces)

6 whole garlic cloves (peeled)

4 or more carrots (cut to 1”)

2 sprigs of fresh thyme

2 bay leaves

2 Tbsp. butter

2 Tbsp. flour

½ cup chopped fresh parsley

1 cup dry cherries

1/3 cup oil

48 oz. Wormtown “Wintah” Brown Ale

14 oz. beef stock

Preparation

Preheat oven to 350 degrees

Soak cherries in warm water.  Braise the boneless short ribs on both sides by seasoning with salt and pepper in hot oil over high to medium heat. Remove meat from pan and put aside.

In pan that you braised the meat add pancetta, onions, red bliss potatoes, garlic, carrots, thyme and bay leaves.  When the onions become translucent and pancetta crispy, remove vegetables and set aside add meat back in the pan deglaze with butter, 24 oz. “Wintah” Ale and beef stock, cover and cook in the oven.  During the last 20 min. in the oven add the vegetables.

To finish take the ribs and vegetables out and put in a serving dish.  In same pan you cooked the meat, add 24 oz. of “Wintah” Ale adjusting to taste and discard the thyme and bay leaves.  In a separate bowl combine butter and flour until becomes smooth.  Bring Ale and au jus to a boil and add butter and flour mixture with cherries stirring until thickened, remember to save the cherry water to adjust sauce to taste.

Presentation

Place ribs on a round plate surrounding with vegetables, drizzle with “Wintah” brown gravy and sprinkle with parsley.

The original date was February 2nd, but due to the weather (what else?!?!), we had to post-pone.

It’s already great to be neighbors with Wormtown Brewery, but to be able to host and share in their events and celebrations is even better!   We are happy to announce that this St. Patrick’s Day we will be hosting their official 1 Year Anniversary Party – a “Year in Beer.” The plans are in motion for an exciting night of  WT craft beer celebration, including raffles & prizes, delicious food offerings, and and a full house of Wormtown fans celebrating together.   If you are a fan of Wormtown Brewery, then mark your calendars for 03/17/11 and we will see you there!

Opening Day Party – Boston Red Sox vs. Texas Rangers

We will be celebrating the first Red Sox game of the season Friday April 1st, in our Tavern.

We will be serving complimentary appetizers from 4-6 pm and will be offering 1/2 price appetizers from from 3-6:30.

In our recent email on 3/31/11, we did a special feature about our great Chef Tommaso Gargiulo.  We would like to share this with all who visit our website too!

Executive Chef Tommaso Gargiulo of Peppercorn’s Grille & Tavern is originally from Sorrento, Italy and started cooking at an early age on the Almalfi Coast with Il Maestro a well known Chef in Sorrento.  Tommaso came to the United States in his mid 20′s and worked in restaurants in St. Louis Missouri, Puerto Rico and New Orleans.   

In New Orleans he had the opportunity to learn cajun and creole cuisine.  From there he came to Massachusetts where he opened the Louisiana Purchase a restaurant in Littleton.

Before joining the Oliveri family at Peppercorn’s Tommaso has also worked for Arturo’s Ristorante in Westboro and there location when it was on Chandler St. in Worcester.  Also Rovezzi’s in Worcester until it closed a few years ago.  He also has taught a number of cooking classes, and catered countless events.

Chef Tommaso’s philosophy is to “Keep the dish simple, let the flavors come from the fresh quality of the ingredients” and this is what he teaches to everyone he serves as well as those who have had the pleasure to work with him.

Were are in process of planning a very special beer dinner during craft beer week in May.  This beer dinner will be unique in that it will be an Italian Tapas dinner.  We will feature Wormtown Brewery beers as well as an exciting range of tapas (appetizers) and other Italian small tastes to compliment the brews.

We have some great new drinks available this fall season.  Our Peppercorn’s mixologists have brought their creative genius to the glass this season with fall spices, seasonal fruits, and fun autumn colors.

Tina’s Apple and Spice ~Bacardi Oakheart Spiced Rum with Apple Cider and a Splash of Soda Water.  Served on the Rocks with a Cinnamon Sugar Rim.

Dave’s Pumpkin Dream ~Vanilla Vodka, Pumpkin Spice Liqueur, Amaretto, and a dollop of Whipped Cream.  Shaken and served straight up in a martini glass.

Our neighbor Wormtown Brewery will be hosting their 2nd Annual O-Fest (Wormtown Oktoberfest) on 10/15/11 @ Union Station in Worcester.

Wormtown is working hard to try and top last year and provide an awesome night for everyone!  They will have some awesome local musicians again this year including: Chris Reddy, Jack Babineau & Don’t Blame Jack & Lydia Warren.

After weeks of anticipation, we debuted our new restaurant menu on 10/19/11.

We have some great new items on the menu to try including our new appetizer “Thai Lettuce Wraps” – Create your own Thai lettuce rolls!  Satay chicken strips, carrots, bean sprouts, crispy Asian noodles and lettuce leaves with three delicious spicy Thai Sauces.

On our Dinner Menu we have a new dish called “Fire & Ice Farfalle” that is already a fan favorite… “Sauteed chicken filets with oven roasted tomatoes, olives, artichoke hearts, fresh basil and crushed red pepper in a white wine garlic butter sauce. Tossed with bowtie pasta and topped with feta cheese.”

And, on our burger menu, we have the new “Code Blue Burger” which is sure to challenge those who like HOT…  ”Topped with Dr. Rub’s secret seasonings and barbeque sauce, cheddar cheese, caramelized onions and roasted red peppers.  This is a very spicy burger!”

There are so many great new dishes to try, so come on down!
